Personal hygiene
It's essential that people who handle food practice high standards of personal hygiene to prevent bacteria from spreading to food.
Handwashing is vital for good personal hygiene. Hands should be washed before commencing or resuming work, after using the toilet, after smoking, after handling rubbish, after using a tissue, after handling raw food, before handling cooked food and after any cleaning task.
All staff should wear clean clothes when working with food
Staff should not prepare food when they are ill, particularly if they have had vomiting or diarrhoea. There should be at least 48 hours clear form illness before they return to work.
