Cross contamination
Cross contamination is one of the most common forms of food poisoning. It happens when food is contaminated with harmful bacteria from other food, dirty surfaces or equipment, and people.
Food contamination can also be from physical hazards, such as coming into contact with surfaces, jewellery or plaster. Food can also be contaminated by chemical hazards, such as bleach or pest control chemicals.
Keep raw and ready to eat foods separate at all times, even if they are packaged as packaging of raw products may be contaminated. Ideally, store raw and ready to eat food in separate units.
Ideally, separate work areas, surfaces and equipment should be used for raw and ready to eat foods in line with government guidance on the prevention of cross contamination with E. coli 0157.
